Ive known of two vans being told to leave Fish and Game access points, albeit in high summer Jan - Feb.
In general you would be restricted to designated camp sites, but the months you have chosen would help.
As for guides, well, there is a lot of mythology about huge trout in crystal clear water in the numerous videos.
There are wonderful rivers with wonderful fish for everyone, guides come into their own only when accessing back country waters.
