If you take me to THAT dam I'll show you...
There is a dam that I know of ( and have fished, once ) that is a bit of an enigma to me.
The owner tells of 4kg+ sm yellows that treat 3x tippet like spider web as well as rainbow trout over 3kg.
The dam is about +/- 1000m long by about 500m wide at the widest and 20 metres deep at the deepest.
There is a grass bed all around the dam up to 3 metres deep. The dam has an earth and rock wall, against which the yellows supposedly spawn.
My only trip to the venue yielded a Rainbow of around 2.5kg, brought up from 18m deep, wind drifted on an intermediate. I was however fishing for sm yellows .
If there are actually yellows there, which my "buddy" says he has seen, and with vis of about 60cm, how do I catch the buggers?

Herman, the most SM I've caught in stillwaters was on the dry, especially if you are lucky enough to do a bit of sight fishing. Maybe that is the way to go?

Ok on a more serious note, I am no expert but what i am of the opinion that SM yellows are not the happiest fish in still water and I would think that they are best targeted top or sub surface water in areas that yield more oxygen rich water such as at the inlet. I think time of the day would also be more relevant because of the way that light penetrate still water compared to fast flowing water.

Lots of still waters with very happy SM, will only mention Sterkies!
Have found that the water must be clean to fish efectively for them - most of the time.
