Poach your trout in water, bit of white wine, squeeze of lemon, couple of bay leaves and peppercorns and a bit of salt. Water should be around 2" deep and simmering gently. Poach for about four to six minutes, lift out and serve with home made aioli or a parsley sauce with noodles tossed with girolles mushrooms in butter on the side. Plenty of chopped parsley over the lot.

I hope I am not tempting fate ... but .... I SHOULD be able to bring some late Millstream Troot down to Douglas ..... let Nick do his stuff with them!!! (trade for WINE!!!

Nick,There should be enough variaty of wines available in Douglas,should you run out of options,there's a good supply of Seebreez,Stormers and Voorsorg in Douglas.
