    Poach your trout in water, bit of white wine, squeeze of lemon, couple of bay leaves and peppercorns and a bit of salt. Water should be around 2" deep and simmering gently. Poach for about four to six minutes, lift out and serve with home made aioli or a parsley sauce with noodles tossed with girolles mushrooms in butter on the side. Plenty of chopped parsley over the lot.

    I hope I am not tempting fate ... but .... I SHOULD be able to bring some late Millstream Troot down to Douglas ..... let Nick do his stuff with them!!! (trade for WINE!!! )

    Nick,There should be enough variaty of wines available in Douglas,should you run out of options,there's a good supply of Seebreez,Stormers and Voorsorg in Douglas.
