    Dribbling down my shirt now. Slash the skin side about 5cm apart to allow flavour to penetrate and quick cooking. Use fresh thyme if you can and serve with a squeeze of lime to cut the grease. Remember to chuck the bones, skins and heads in a pot with a little water and simmer for 20 minutes or so to make stock. You can freeze this and use it as required for stews and soups.

    Serve leftovers cold with aioli.
